Indeed, Luc Légendre will introduce you to the 'gyotaku' technique.

A former restaurateur, he combines Gyotaku with his knowledge of the product during the transmission of his expertise. It’s a way of raising awareness about respect for the product, and thus for life, in line with a sustainable approach.

What makes this exhibition particularly special is the use of squid ink, after which the fish is consumed.
